Meet Nana Rosa

I'm Rosa. I was born in Morelia, Michoacán, in a house where the comal was hot before anyone was awake. My mother never wrote a recipe down — she'd say ven, acércate, come closer, this little step matters. I've been feeding people for more than forty years now: my own six, the neighbours, the church hall on Sundays, and lately a whole lot of you through the channel.

When my granddaughter moved away she called me every week asking "how much salt, Nana?" — and I realised nobody had ever written it down for her. So I did. Two years at this stove, weighing what I'd always done by hand, until every dish in this book could be cooked by someone standing alone in a kitchen with no one to ask.
